In the DMV area, mumbo sauce is a local specialty shrouded in mystery. Borne out of the Chinese carryout culture, the tangy, sweet condiment often poured over chicken and fried rice is a symbol of D.C. regionalism, championed by local heroes like Wale and Kevin Durant. The same mystery and allure can be said of Chicago's mild sauce though, a staple in the city's south side chicken shacks, where the myth of its flavor and origins remain the stuff of legend thanks to countless co-signs.
