Thanksgiving complications used to be about the logistics of reuniting with family and arranging a feast for an army of guests—that is, until Black Friday started to become the foremost concern of the season. This year Walmart is going to push one of the massive sales gimmick back two hours to 8 p.m. on the night of Thanksgiving. This means their employees have to duck out of their Turkey Day meals early, and customers might be tempted to skip out altogether in order to get a good spot in line.

If you’re a Black Friday specialist, complicated recipes like the turducken might not work well. Instead, consider a holiday shortcut to cooking a turkey in which the time is cut down to 45 minutes or so.

The key is to spatchcock, or split open, the bird first, a process that’s detailed in the video above. From there, you can either follow the rest of the instructions and grill the split turkey for 75 minutes, or roast it in the oven for 45 minutes.
