It appears as if the days of plain vanilla cones are long gone. In recent years, unusual and inventive ice cream flavors have gone from being outliers to becoming the norm.

At the now-shuttered El Bulli, Ferran Adrià crafted umami bomb of parmesan ice cream, while British chef Heston Blumenthal made bacon-and-egg ice cream his signature dessert. Stateside, Max & Mina’s in Queens has been serving wildly-flavored scoops, like sweet corn and beer, since 1997, while Salt & Straw in Portland creates varieties like pear with blue cheese, and balsamic strawberry with cracked black pepper.

With newcomers like Sam Mason’s OddFellows hitting the scene, we predict the wacky world of ice cream will only get weirder and weirder, and we’re all for it.
