Some argue that the breakfast taco was a creation of Tex-Mex culture; others say it was born in the time of cowboys and vaqueros. Either way, one thing is certain: The breakfast taco is one of our favorite morning traditions.
Haters will tell you there are no good breakfast tacos outside the Southwest, and even more specifically, Austin. Yet throughout NYC, devoted cooks are stuffing warm flour (and corn!) tortillas with scrambled eggs and fillings like cotija cheese, chorizo, pico de gallo, and potatoes. If there is a more suitable and delicious hangover-obliterating breakfast food out there (besides egg-and-cheese sandwiches, spicy soups, and chilaquiles), we don’t even want to hear about it.
