The O.G. Shake Shack in Madison Square Park just reopened last week. To celebrate, Shake Shack will sell 500 wastED Juice Pulp Cheeseburgers, created by chef Dan Barber, for one day only (this Friday, May 29).

The juice pulp veggie burgers first appeared at Blue Hill’s recent wastED pop up, where all dishes were created from ingredients that would have otherwise been thrown away as garbage. Barber’s veggie burger patties are made from recycled vegetable pulp from a cold-pressed juice operation. Genius.

The innovative veggie patty will be topped with lettuce, melted cheese from Jasper Hill cheese trimmings, bruised beet ketchup, and honey mustard mayo. The bun is repurposed too, of course—it incorporates a mash made from stale rye bread.

The wastED pop up demonstrated that we can transform the ignored and un-coveted—essentially, things we’d normally put in the garbage like ugly vegetables, beef tallow, and kale ribs—into extraordinary dishes. Barber’s dank-looking juice pulp veggie burger is added proof that re-using food waste can make for delicious eating.

And since your dad, sister, cousin, girlfriend, and grandma all drink a cold-pressed green juice daily, we best start doing something with all those scraps. Plus, it’s Action Bronson-approved.

The burgers will set you back $8.95 each, and Shake Shack will donate $1.00 from each burger sold to City Harvest NYC.  yum
