The world’s cheesiest pizza was just created in Melbourne, Australia. The pie—created by Johnny di Francesco, who runs the pizzeria 400 Gradihas 99 (count it) different cheeses piled on top of one crust. According to the Guardian Australia, Di Francesco melted together 94 cheeses, including everything from Gorgonzola to Swiss to double cream brie, into what he calls a “super cheese” (which is something we want to keep in our fridge always and forever).

Di Francesco spread the super cheese directly on top of the crust before scattering the remaining five cheeses—including buffalo mozzarella, ricotta, and goat—across the top. So, why stop at 99 cheeses?

Grub Street points out that, in the recent Teenage Mutant Ninja Turtles movie, Donatello swears a 99-cheese pizza is a “culinary impossibility”—something that the Melbourne pizzeria set out to disprove.

I mean, if you’re going to do an outlandish publicity stunt, why not create a pizza with 99 cheeses, amirite?

Apparently, the super-cheese pie ($23) is pretty awesome. NDTV reports,

“Di Francesco has created a balanced and surprisingly nuanced pizza. It sounds like a supersized hot mess, the kind of novelty cuisine you might see on a menu at a suburban pizza and ribs joint, but it is anything but…Crucially, I didn’t walk away from Gradi feeling as though I had just eaten 99 cheeses. The topping is generous without being excessive and because the super cheese is so concentrated little is actually needed.”

We asked Paulie Giannone, the man behind the spectacular Paulie Gee’s in Greenpoint, if he had thoughts or #feelings about the pie. His response: “There are 99 cheeses??”
