Fu Suqing was born on July 19, 1897 in Sichuan, China. Ever since, the region’s most elderly citizen has eaten twice-cooked pork three times a day. Suqing says pork is the secret to her longevity.

Twice-cooked pork is a classic Sichuan recipe using skin-on fatty pork belly or leg. First, the pork is simmered just until it’s cooked through. The pork belly is then sliced, and stir-fried in a wok with black bean, chili bean, sweet bean, and leek.
