In the latest episode of Eater’s video series Sietsema’s Secrets, food writer and culinary adventurer Robert Sietsema travels to Spicy Village in NYC’s Chinatown. Spicy Village specializes in food from the Henan region of China, including wide wide wheat noodles, sour and milky soups, and “a humongous wok bubbling with chiles, cumin seeds, and sichuan peppercorns,” called spicy big tray chicken. Sietsema and crew narrow in on the making of the big tray chicken, which he calls “one of the hottest dishes in town.”
