The literal meaning of dim sum is “to touch your heart,” and our hearts are continuously touched by delicate steamed shrimp dumplings, wobbly egg custard tarts, and fluffy roasted pork buns served at dim sum restaurants across America. We love the shrimp and snow pea leaf dumplings and cruller rice rolls at Nom Wah Tea Parlor in Manhattan’s Chinatown, as well as all of the sumptuous offerings at Elite Restaurant in L.A. (a favorite of Jonathan Gold).
