Momofuku honcho David Chang sat down with Adam Savage (he of Mythbusters fame) for the first edition of The Talking Rooma new series where Savage interviews people in his own home library. Despite running nearly an hour, this conversation is well worth the investment—Chang delves into the universal challenges of maintaining a growing brand without losing sight of what you are really trying to do, debunks myths surrounding MSG, and shares some thoughts about how the cheffing game has changed in the age of the Internet and food TV.

There are tons of jewels from Chang in here—I especially love his idea about not wanting Momofuku to ever get too efficient, because sometimes doing things the hard way and letting yourself fail is the best to end up with the most interesting final product.
