Italian cooking is almost always made better by the presence of a 90-year-old grandma, and Del Posto’s latest pasta special is no exception. In the six-minute video above, Valerie Mancuso schools her grandson Mark Abdoo, who happens to work at the fairly reputable Italian joint, on the fine art of making a timpano: a combination of noodle, egg, sauce, and cheese named for its resemblance to a drum after it’s been assembled and baked.

Black-and-white footage of Valerie’s home kitchen is interspersed with color footage of Abdoo preparing the dish at Del Posto, where it’s available by request for four people at $100 total. The price may seem steep, but as the video shows, the timpano is one hell of a labor-intensive dish.
