Pork chop is no longer a catch-all for all cuts of pork—now you’ll be able to choose between a Porterhouse Chop, Sirloin Chop, and New York Chop. Taking a cue from the beef industry, the differentiated names aim to create a sense of prestige and “transform the ‘everyday’ into the extraordinary.” With pork prices up, the industry hopes that giving their products upscale names evocative of steak houses will drive sales. Look out for the labeling changes, coming to a grocery store near you this summer.

So far, no word on whether the modified naming scheme will also apply to bacon.
