No dish served at the presidential inauguration will go unchecked for potential food poisoning—not if the Food and Drug Administration can help it. The FDA has built a dream team of inspectors with 35 staff members. Among them, 18 are trained in the art of retail food and field inspection.

Working with the D.C. Department of Health, Maryland and Virginia county health departments, and the FDA Baltimore District Office, the collective of food safety experts “will review menus, observe food preparation, train workers in safe food handling and make sure they have the data they need to trace any contamination back to its source.”

So what will people be eating? On one menu for guests, there will be “steamed lobster with New England clam chowder sauce; hickory grilled bison with red potato horseradish cake and wild huckleberry reduction; and Hudson Valley apple pie with sour cream ice cream, aged cheese and honey.”
