It’s a literal take on an old adage: One woman’s trash is another’s business plan.

Jenny Dawson is among the new wave of entrepreneurs who turning the problem of food waste into a win-win opportunity. While restaurants, hotels, and supermarkets are joining the effort to reduce food waste, CNN says that these third-party companies are new, critical component of the fight to turn the trend around.

Dawson’s London-based company Rubies in the Rubble produces a preservatives line from fruits and vegetables destined for the dump. In Northern California, Nikhil Arora and Alejandro Velez founded Back to the Roots, a company that collects discarded coffee grounds from 35 Berkeley-area cafes. These grounds are used as the base for a mushroom-growing kit.

The United Nations report that 1/3 of all food is wasted around the world, tallying up to 1.3 billion tons per year.
