“When all my cooks are gone and I’m creating new desserts, I listen to music on my iPhone with earbuds on. I usually start with slower music, then soothing music, and when I’m really pushing myself, I finish with rap. The dark chocolate brownies are something I make at home when I get the sweet craving. These ingredients are usually always in my pantry. It’s laid back/no-fuss like the music and fits the timing of the playlist perfectly.”

The Recipe: Dark Chocolate Fudge Brownies

Yield: 6 brownies


1 cup sugar

1 cup brown sugar

1¼ cup cocoa, sifted

½ cup flour, sifted

½ tsp. Kosher salt

4 large eggs, room temperature

8oz. melted butter, room temperature

3 tsp. vanilla extract

1 cup chocolate chips

Cooking instructions

1) Combine sugars, cocoa powder, flour, and salt together and sift.

2) Combine the eggs, butter, and vanilla and blend with a whisk until completely combined.

3) Fold in chocolate chips.

4) Bake in a 12×12 baking dish for 12–15 minutes.

5) Leave to cool before eating.
