It was a big moment for craft beer when Dogfish Head founder Sam Calagione landed a series on the Discovery channel, in which he charted his globe-trotting quest to find inspiration for new beers. Sadly, Brew Masters was short-lived, and ended up getting pulled from the air—some say due to pressure from big-beer advertisers, but that’s pure speculation—during its first season.

Our friends at Brew York New York tipped us off to an unaired episode that’s now available in full on YouTube. It’s a pretty cool one too, focusing on the creation of Birreria. Calagione chills on the Eataly rooftop when it was just a construction site, testing peppercorns in various brews with Mario Batali and Joe Bastianich. Then, he heads to Italy to work with Leo di Vincenzo of Birra del Borgo and Teo Musso of Baladin to create the signature Thyme Pale Ale.
