The second season of That’s Odd, Let’s Drink It has seen Dogfish Head founder Sam Calagione drink everything, with just about everyone—from a human saliva-infused beer with comedians Rhett & Link, to the spiciest beer ever created with Hot Ones host Sean Evans.

For the season finale, Sam sets out on a mission to build the ultimate beer-fueled omakase. Instead of drinking cans of industrial lager with takeout California rolls, the goal of the experiment is to match Japanese and American brews with some of the greatest hits from the omakase menu at Shuko, one of NYC's most acclaimed sushi bars.

Joining Sam and chef Jimmy Lau for this adventure in micro-pairings is Julianna Barwick, the critically-acclaimed musician who once crafted an album using sounds recorded during the Dogfish Head brewing process. The resulting project, Rosabi EP, shares its name with the beer that Julianna helped create: Dogfish Head Rosabi, a Louisiana red rice-based IPA brewed with wasabi. Sam and Julianna bust out a vintage bottle of Rosabi to see how its flavors matured over time and pair it with one of Jimmy’s specialties, seared toro.
