Dogfish Head founder Sam Calagione’s off-the-wall brewing antics continue in the latest episode of That’s Odd, Let’s Drink It. For Hot Ones host Sean Evans, Calagione unleashes one of his most extreme creations to date—a stout made with oleoresin capsicum, the active ingredient in weapons-grade Mace—at legendary Jersey City craft-beer haunt Barcade.

Before diving into the boundary-pushing brew, Sam leads Sean on a journey to discover how beer can pair with spicy dishes, introducing him to combos like lamb vindaloo with Nitro Milk Stout from Left Hand Brewing Co., and spicy chicken tacos with a local IPA from Kane Brewing.

With their palates warmed up, the duo taste-tests In Your Mace, a beer so spicy that Dogfish brewers had to use special protective gear to make it. And just for good measure, Sam and Sean bust out a special contraption called the Randall that allows them to further infuse the stout with oils pulled from a special sack o’ peppers (including Carolina Reapers, clocking in at more than 2 million Scovilles) sent from infamous chilehead Smokin’ Ed Currie. The goal: To create the spiciest beer of all time.
