Beers aged in whiskey barrels are ubiquitous these days. But what about bourbons aged in old whiskey barrels that used to hold beer?
That’s the concept behind New Holland Brewing Company‘s Beer Barrel Bourbon, which brings the process of barrel-aging full circle. Here’s how it works: First, the brewery takes spent bourbon barrels and uses them to age its imperial stout, Dragon’s Milk, for 180-day. After the beer has been removed, in goes a new batch of spirits—a mix of 110- to 115-proof bourbons from Lawrenceburg Distillers Indiana—for a 90-day stint. As Chicago Tribune reports, New Holland eventually hopes to distill its own bourbon.
So how does bourbon-flavored-beer-flavored bourbon taste? “Nicely sweet and impossibly smooth thanks to the beer’s influence, which sands down the whiskey’s rough edges with faint notes of roasted barley and chocolate,” says the Tribune. At 80-proof, the final product is a testament to the smoothing effect of Dragon’s Milk, says Today.
