The Ultimate Guide to Taco Night

From nacho cheese sauce to grilled fish tacos, these 10 recipes will turn your taco night into a serious fiesta.

  • Coconut-Lime Pork Tacos with Black Beans and Avocado. The care that goes into flavoring these tacos is what makes them amazing. A serious, toasted spice blend gives them another dimension, and the lime and pineapple juices another still. We love tortillas, but we could eat this straight out the pan.
  • Grilled Salsa. This salsa is smoky, spicy, and totally worth firing up your charcoal grill for.
  • Homemade Corn Tortillas. Making tortillas from scratch isn’t as tricky as it sounds. These are so much more real deal than anything you could get from a package.
  • Fish Tacos on the Grill. Nothing beats tender chunks of grilled white fish nestled in a soft, warm flour tortilla among strips of sweet onion and green pepper, creamy slices of avocado and a sprinkle of fresh cilantro. Don’t forget lime wedges for spritzing, and plenty of homemade salsa.
  • Nacho Cheese Sauce. Though they may look similar, this bears no resemblance to the gloppy, processed goo of concession stand nightmares. This sauce is velvety, spicy, and, above all, actually tastes like cheese.
  • Margarita. You can’t have taco night without a perfect margarita. Sorry. You just can’t.
  • Roberto Santibañez' Classic Guacamole. Crush only enough of the avocado to warrant it consideration as a dip rather than a salad. Bathing the guac in a vividly flavored chile sauce takes it to the next level.
  • Fried Avocado Tacos with Sesame and Lime. Tacos like you've never seen: creamy, crispy breaded avocado stands center stage, supported by a sesame cabbage slaw, cilantro-kissed crema, and salt pork-simmered pinto beans.
  • The Splendid Table's Refried Beans with Cinnamon and Clove. A completely inauthentic cheater's method for light and fast refried beans—plus, an unexpectedly sexy spice combo you haven't tried (on beans) yet.
  • Crispy Oven-Baked Tortilla Chips. Now that you have homemade tortillas, why not go all the way with homemade chips? Feel free to customize these as you will—cinnamon sugar, hint of lime, you name it.

If you’re trying to fiesta, tacos are the way to go. You can have them however you like—soft shell or hard shell, pork, fish, or even fried avocado. Still, the perfect taco night is so much more than the tacos. You need really good tortillas, the best homemade chips, gooey cheese sauce, spicy salsa, and, of course, a margarita (or two). With Cinco De Mayo around the corner, we have pulled together all of our taco night favorites to make your taco night a fiesta to end all fiestas.
