For a hot second last year it seemed like the old-school French bistro was about to have a high-profile comeback—a revival long overdue as the crown prince of the last wave, Balthazar, turns Sweet 16 this year. Then Montmartre opened to a minefield of disappointment, and all the pressure came down on Andrew Carmellini's Lafayette, an all-day megamart of Gallic goodies, with massive rotisseries spinning perfect roast chicken and a boulangerie selling baguettes and macarons up front. Reviving battered old standards like steak frites and salade Niçoise with vivid flavors and impeccable ingredients, Lafayette is matter-of-factly French—neither apologizing for its stodginess nor winking epileptically to make sure we're all in on some post-ironic joke. — Regan Hofmann
