Two Los Angeles restaurants claim to be the birthplace of the glorious French dip sandwich: Cole’s and Philippe The Original. But we’re less concerned about where the sandwich was first created, and more focused on how beautiful that creation actually is. A classic French dip is a hot, meaty sandwich consisting of thinly sliced roast beef on a French roll, served with a side of au jus (a.k.a. beef juice from the roasting process).

The French dip can be made with other meats, too—just take the wonderful Lamb Dip with Blue Cheese at Philippe’s.
