10 Cookie Recipes You Need to Make Right Now

The cookie recipes you've spent your life searching for are all right here—we've got everything from triple chocolate espresso cookies to salty caramel shortbread.

  • Two-Bite Buckeye Cookies. Cayenne and ancho bring a pleasantly slow but undeniable burn to the chocolatey cookies, and the creamified peanut butter (no, seriously—the filling is the winning combination of cream and peanut butter) sandwiched between the cookies presents a welcome, soothing contrast.
  • Almond Thumbprint Cookies with Dark Chocolate and Sea Salt. A rich, salty chocolate center is absolutely delicious with the fragrant vanilla-almond shortbread.
  • Pierre Herme and Dorie Greenspan’s World Peace Cookies. Fine and sandy, but with a friendly, soft chew, these cookies are made of well-salted, well-buttered cocoa dough, with generous pockets and wisps of chocolate feeding through. One bite is all the proof you need that they live up to their name.
  • Millionaire’s Shortbread. A base of buttery shortbread, topped with a blanket of smooth caramel and then a top layer of chocolate, sprinkled with sea salt. Enough said.
  • Chocolate-Covered Cherry Valentines. Reminiscent of those gooey cherry cordials—but oh, so much better—these cookies hit that chocolate, cherry, and boozy craving that comes around each February.
  • Sweet Tea Cookies. This recipe takes everything we love about a good old fashioned glass of sweet tea —the herbal notes, the mint, and of course, the heavy-handed sweetness—and bakes it into cookie form.
  • Triple Chocolate Espresso Cookies. Dark rum, kosher salt, and espresso powder bring out the very best in semi-sweet chocolate, trust us.
  • Salted Double Chocolate Peanut Butter Cookies. These are everything we love about a peanut butter cookie, but more: rich, crumbly, chocolate-y dough, chunky with peanuts and chocolate chips.
  • Magical, Marvelous, Memorable Cookies. This is the least bossy recipe we have. Start with some basic ratios, and then pick a salty snack, some candies, some cereal, some sort of nut, and cinnamon or other spices if you are so inclined, throw it all together, and devour.
  • Old-Fashioned Sour Cream Cookies. The combination of these supple and light cookies with a sucker punch of sweet frosting is addictive.

When it gets cold outside, everyone flocks to soups, stews, and other warming things. What no one remembers: a warm cookie, fresh out of the oven, is just as good at staving off winter’s chill as a steaming bowl of soup. Crispy outside, chewy inside, gooey, melty chunks…you can’t go wrong.

Though we love and respect classic chocolate chip, oatmeal, and peanut butter, we have a few other suggestions for you. Forget the soup—these cookies (everything from buckeyes in cookie form to a cookie rendition of a boozy cherry cordial) are the best that we have, and they are all you need to warm up your winter.
