Watch Alton Brown Create a More Literal Version of the Classic Grilled Cheese (Video)

A grilled cheese with actual grilled cheese? Mind blown.

Home-cooking wizard Alton Brown makes a pretty strong point at the beginning of this video: Why do we call it a grilled cheese sandwich when the cheese is not actually grilled? 

For his version, Brown grills the cheese and the bread, then wraps the whole sandwich in tin foil and throws it back on the grill one more time.

You can split hairs over the definition griddling versus grilling when it comes to the technique, but either way this is an awesome way to make a grilled cheese at a cookout during the summer. And however you choose to construct your sandwich, Brown’s cheese blend seems pretty solid: a half-and-half mix of extra sharp cheddar and Gruyere kicked up with dry mustard, smoked paprika, and ground black pepper.
