The awesome first half of Mind of a Chef‘s third season focused on Louisville chef Edward Lee. Part deux will follow Fäviken chef Magnus Nilsson.

Between foraging for eggs and cutting through aged meat, Nilsson says, “I think having some limitations can be very, very good, because if you have everything all the time, there’s very little motivation to create something new, and possibly better.

The Bourdain-narrated show will follow Nilsson through Sweden, France, Norway, and the Faroe Islands. If this new season three trailer tells us anything, it’s that the chef drops myriad philosophical musings, including this line:

“My whole idea of running then kitchen is that: anything that could be controlled, should be controlled. And anything that can’t be controlled should just be left like it is.”

The new episodes will be available for immediate viewing on iTunes, Amazon Instant Video, and Google Play beginning Monday, September 8.
