Between foraging for eggs and cutting through aged meat, Nilsson says, “I think having some limitations can be very, very good, because if you have everything all the time, there’s very little motivation to create something new, and possibly better.“
The Bourdain-narrated show will follow Nilsson through Sweden, France, Norway, and the Faroe Islands. If this new season three trailer tells us anything, it’s that the chef drops myriad philosophical musings, including this line:
