On last night’s Late Night With Jimmy Fallon, wunderkind chef Flynn McGarry showed Jimmy and Jason Schwartzman what to do with all that leftover Halloween Candy. (You ate it all? Us too. Damnit.) Starting with a smoked maple ice cream, McGarry folds in crushed frozen chocolate bars and spoons the mixture into lollipop molds. After a brief trip to a cooler containing liquid nitrogen, the ice cream pops are drizzled with chocolate, more candy, and Maldon sea salt.
Watching McGarry work brings us back to when we were fourteen. What were we doing? Playing with liquid nitrogen and hydrocolloids? Probably, we just can’t remember. Watch above as Fallon has the same realization and Schwartman exclaims, “I’m touchin’ it!” when liquid nitrogen is introduced.
