ARTINFO goes behind the scenes at Alder, wd~50 chef Wylie Dufresne’s newish, more casual concept in NYC. We’ve written extensively about Wylie—aka the god of deep fried hollondaise sauce and hydrocolloid gums—and we’ve sung the praises of Alder’s conceptualized pub fare, including the chef’s alternative take on pigs in a blanket.

In the video, Wylie and Alder executive chef Jon Bignelli explain how they’re breaking the mold of the traditional small plates restaurant by taking familiar dishes and reinterpreting them to defy diners’ expectations. Wylie explains, “We want you to have fun as a diner, but we want to have fun as operators as well.” That’s a pretty fantastic restaurant model if we do say so ourselves.
