One of the best parts of the James Beard Awards is the crowning of America’s Classics, which digs past zeitgeisty hype to celebrate the regional stalwarts that have been putting in work for years. This year, the James Beard Foundation produced some nice segments about each, which you can watch below.
Perhaps the finest creation myth is that of Prince’s Hot Chicken Shack in Nashville: Lore traces the recipe for spicy chicken back to the owner’s great-uncle Thornton Prince, whose lady friend tried to punish him for alleged infidelities by dousing his chicken with hot peppers. Turns out he loved it, and new Southern delicacy was born.
