  • Martha Stewart's Macaroni and Cheese. We’d be remiss to leave mac ‘n’ cheese off this list. It's a French mother sauce wrapped around an Italian dried noodle, shot through with cheese. And, according to legend, it was all magically brought together for the first time by Thomas Jefferson. In other words, could there be anything more American?
  • Ode to the Caseus Cheese Truck. We tend to think of grilled cheese as comfort food at its simplest, but the little touches here—a few sage leaves, a grating of Parmigiano-Reggiano, a dollop of grainy Dijon and a garnish of bright little cornichons—add up to a very sophisticated treat.
  • Paprika-Scented Manchego Chorizo Puffs. Manchego and chorizo are a classic pairing, and investing in the good Spanish stuff will pay dividends here. To keep the Iberian theme going, consider using a sharp pimentón in lieu of paprika.
  • French Onion Soup. This is almost, but not quite, the traditional French onion soup that comes to mind. After all, it calls for 2 full cups of wine or beer. We used a dark ale and really liked the bit of kick that the finished soup still had after 2-plus hours on the stove.
  • Cream Cheese Cookies. These cookies are chewy in the center, where the texture is kind of like a coconut macaroon, and buttery and burnished on the edges, which crumble like a sandcastle gently collapsing. The cream cheese gives the cookies a nearly unidentifiable tang that keeps you reaching for just one more.
  • Jennie’s Homemade Manicotti. A truly unique take on baked pasta, this crepe-style manicotti recipe requires a little faith, but not all that much work considering the brilliant results. Just whiz the batter up in a blender, and then all you need to do is crank out 10 or so crepes to roll around a simple mixture of ricotta, eggs, parsley and parmesan. Don't skimp on the ricotta or marinara sauce -- you'll be doing these delicate, creamy manicotti (and yourself) a huge disservice.
  • Cheese Biscuits. Impossibly tender and almost melting within, the subtle bite of cheddar is woven throughout these cheddar biscuits.
  • Traditional Fondue Fribourgeois. Nutmeg, pepper, lemon juice, and a shot of Kirsch bring this mix of molten cheese an wine to life, and a touch of cornstarch thickens the mixture and keeps it from breaking. This is a loose fondue, clinging gently to whatever you dip in it; if you like yours more substantial, just stir in a little extra cornstarch, thinned with a few drops of water.
  • Salvadoran Breakfast Cakes (a.k.a. Quesadillas). These Salvadoran "quesadillas" are a unique blend of sweet, savory, and tangy, with the texture of a fine, delicate corn muffin and a perfume of parmesan. The edges of the little cakes crisp and brown beautifully, while the centers remain snow white and tender.
  • Chevre Devils. Packed with thyme-spiked chevre and topped with crackly spiced pecans, sticky sweet Medjool dates make the perfect party snack. We advise doubling the filling amounts, if you're devilish like us.
  • Lime ‘n the Coconut Mini Cheesecakes. We love the saltine crust in this recipe -- the crackers lend a little saltiness to the coconut and brown sugar, and the press-in crust is a breeze. There’s just enough lime in the filling to make it feel refreshing rather than heavy, and the coconut topping makes for a whimsical presentation.
