Mike Lovullo says: "The town of Cologne, the namesake for Kölsch [Cologne is Köln in German], not only has more breweries than any other city in the world, but it also has a federal law protecting its right to brew this pale, top-fermenting ale. The kölsch style is a bit of a hybrid style as it uses an ale yeast, but ferments at lower lager temperatures. The result is a very crisp beer that finishes like a pale lager, but still has the fruity accents of an ale."
