Dogfish Head Is Releasing a Wasabi-Laced IPA Called Rosabi

The craft brewery teamed up with musician Julianna Barwick for its latest music-beer collabo, featuring a kick from the horseradish-like Japanese root.

Following in Dogfish Head tradition of incorporating oddball ingredients into its ales, the Delaware brewery is getting read to unleash Rosabi—a wasabi-laced IPA brewed with Simcoe and Centennial hops, Munich and Caramel malts, and Louisiana rice.

The funky brew was created in collaboration with musician Julianna Barwick, who even grated the fresh wasabi herself for a preliminary test batch. But that’s not where the collaboration ends. A limited-edition run of 1000 six-bottle cases will include Barwick’s four-song EP Barwick that uses samples of sounds from Dogfish’s recently unveiled 200-barrel brewhouse. (For drinkers who aren’t interested in post-modern soundscapes, there will also be 750ml single bottles available starting June 1.)

We’re also not sure Rosabi stacks up to Ghost Face Killah in the heat stakes, but the brewery says “Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.” Unlike Freetail Brewing Company’s Spirulina Wit, the wasabi beer isn’t naturally green—instead, the IPA gets its vivid red hue from the Louisiana red rice used in the brewing process.
